Smoked & Cured

 Our smoked products are handcrafted using fine pork trim and natural spices. Our recipes reflect the classic recipes from sausages around the globe but made with care right here in the Skagit Valley. Our pepperoni, Landjaeger and Cervelat are fermented for two days with natural cultures to create an honest tanginess before an all-day smoke over hazelnut shells. Our hot dogs and Polish dogs retain an “old world” snap. Smoked chops, each hand cut and trimmed, are brined with apple cider and our special spices overnight before the smoking process.
